Wassail

Inspiration: The term was borrowed from the Norse and in Old English was a toast to good health or fortune. Wassailing is an ancient English tradition in which the villagers would sing, dance and drink in the apple orchards on twelfth night to awaken the spirits and ensure a good harvest. Wassail is the mulled (heated and sweetened or spiced) apple cider drink that villagers would drink during this ritual. In more recent times, bourbon has been added to the recipe.
